Dinners We're Eating Week 3

Welcome to our third week of posting our meal plans! We hope you love these dinners and they nourish your bodies like they do ours. Each recipe is able to be edited to fit your dietary needs!

 

Grocery List:

Fried Chicken with Truffle Parmesan Fries

-Publix or Popeyes Fried Chicken

-Frozen French Fries

-Grated Parmesan

-Truffle Oil

-Umami Seasoning

-Optional Garlic Aioli

 

Soy Ginger Salmon Bites with Snow Peas & Mushrooms on top of Rice

-2 Salmon Filets

-Garlic

-Soy Sauce

-Gochujang

-Honey

-Ginger Paste

-Sesame Oil

-Snow Peas

-Mushrooms

-Jasmine Rice

 

Cheese Tortellini with Blistered Tomatoes & Italian Sausage

-Cheese Tortellini

-Grape Tomatoes

-Garlic

-Garlic Paste

-Tomato Paste

-Half & Half

-Mild Italian Sausage

-Crushed Red Pepper

-Parmesan

 

Smoked Kielbasa Sheet Pan Dinner with Onions, Bell Peppers, and Potatoes

-Smoked Kielbasa

-Onion

-2 Bell Peppers (Any color you like)

-Red Skin Potatoes

-Whatever seasonings you like, I usually use Garlic Powder, Salt, Pepper, Onion Powder, and Tony's Creole

 

Recipes!

Truffle Parmesan Fries

-Put frozen fries in Air fryer

-Spray with avocado or olive oil

-Cook using instructions

-While hot, drizzle truffle oil over top and mix well

-Sprinkle with umami seasoning and grated parmesan

-Bonus if you dip into Garlic Aioli

 

Smoked Kielbasa Sheet Pan Dinner with Onions, Bell Peppers, and Potatoes

Cheese Tortellini with Blistered Tomatoes & Italian Sausage

-Cook Tortellini to package

-Brown and cook sausage on stove with garlic

-Once halfway cooked add whole grape tomatoes 

-Make space on pan to cook off some tomato paste with garlic paste

-Mix all together

-Add 1/4 cup of half and half

-Drain tortellini and save some pasta water

-Add tortellini with sausage and tomatoes

-Mix all together with small amount of pasta water 

-Serve and Enjoy!

 

Soy Ginger Salmon Bites with Snow Peas & Mushrooms on top of Rice

-Preheat oven to 350 degrees

-Cut Salmon into 1"x1" bite

-Marinade in a bowl with gochujang, garlic, soy sauce, honey, and ginger pasta

-Cook Jasmine rice based on package instructions

-Heat tablespoon of sesame oil with tablespoon of olive oil in pan over medium

-Add snow peas and mushrooms

-Put cooling rack over top of cookie sheet, space salmon bites out across rack

-Bake salmon bites to liking (I did mine for 12 min for medium well)

-Add garlic and soy sauce to veggies (measure with your heart)

-Serve all together in a bowl and enjoy!
