We hope you are having a great week so far! This week we had some really yummy meals and got to try some new things.

Lemon Garlic Chicken Thighs with Goat Cheese Truffle Risotto

-1lb of Boneless Skinless Chicken Thighs

-1 Lemon

-Garlic

-White wine (optional)

-Butter

-Goat Cheese Truffle Risotto Box from Aldi

 

Caramelized Onion Burgers with Parmesan Potatoes

 -1lb Ground Beef

-Onion

-Cheddar Slices

-Brioche Buns

-Garlic Aioli

-Red Skin Potatoes

-Grated Parmesan

 

Chicken Fajitas

 -Boneless Skinless Chicken Breast

-Onion

-2 Bell Peppers

-Tortillas

-Taco Bell Hot Sauce

-Sour Cream

 

Crispy Shrimp Spring Rolls with Pan Fried Gyoza

 -Precooked Shrimp

-Seaweed Snacks

-Jasmine Rice

-Baby Cucumbers

-Rice Paper Wraps

-Avocado

-Frozen Gyoza

-Sesame Seeds

For the Goat Cheese Truffle Risotto follow the instructions on the box
Overall the risotto did the job but there was a chemical cheese after taste that I couldn't get past. Zach didn't notice it and really enjoyed it but in the future we would get one of the other flavors and not the Goat Cheese.

 

Caramelized Onion Burgers with Parmesan Potatoes

-Slice onions and place in pan on medium-low with 1 tablespoon of butter, cook until caramelized

-Combine 1lb of ground beef with onion powder, paprika, garlic powder, salt and pepper in a large bowl

-Knead together to mix and form into patties

-Cook on stovetop griddle until internal temperature is 145 degrees or higher

-Top with cheddar cheese and melt

-Toast buns 

-Spread Garlic Aioli on bun

-Build burger, serve and enjoy

Chicken Fajitas

 -Preheat oven to 400 degree

-Cut chicken breast into cubes

-Slice onion and bell peppers

-Place all onto cookie sheet

-Drizzle with olive oil and season with paprika, cumin, chilli powder, salt, pepper, and Tajin

-Bake until chicken is done

-Serve and Enjoy

 

Crispy Shrimp Spring Rolls with Pan Fried Gyoza

-Heat pan with 1/2 cup of water

-Toss in frozen dumplings and cover

-Cook until soft

-Pour off any extra water and add olive oil

-Pan fry gyoza to desired crisp

For the Crispy Shrimp Spring Rolls I followed this recipe:

-In place of the Chicken in the recipe I used precooked shrimp
