Dinners We're Eating Week 6

Welcome to our sixth week of posting our meal plans! We hope you love these dinners and they nourish your bodies like they do ours. Each recipe is able to be edited to fit your dietary needs!

 

This series is making me realize how often we eat the exact same meals or ingredients with a small twist haha. Maybe in the future we will do some more experimentation. 

 

Grocery List:

 

Caprese Salad with Seasoned Chicken Thighs
-Boneless Skinless Chicken Thighs
-Dan-O's Seasoning
-Grape Tomatoes
-Mozzarella Pearls
-Fresh Basil
-Romaine
-Balsamic Vinegar
-Olive Oil
-Honey

 

Sous Vide Chicken Breasts with Garlic Couscous

-Couscous
-Boneless Skinless Chicken Breasts
-Dan-O's Seasoning
-Garlic
-Parsley
-1/2 Onion

Cheese Tortellini with Blistered Tomatoes & Italian Sausage
-Cheese Tortellini
-Grape Tomatoes
-Garlic
-Garlic Paste
-Tomato Paste
-Half & Half
-Mild Italian Sausage
-Crushed Red Pepper
-Parmesan

 

Smoked Sausage Sheet Pan Dinner with Onions, Bell Peppers, and Potatoes

-Smoked Sausage
-Onion
-2 Bell Peppers (Any color you like)
-Red Skin Potatoes
-Whatever seasonings you like, I usually use Garlic Powder, Salt, Pepper, Onion Powder, and Tony's Creole

Recipes

Caprese Salad with Seasoned Chicken Thighs

-Cut and wash vegetables

-Pat dry boneless skinless chicken thighs and season heavily with Dan-O's Seasoning and a pinch of salt

-Preheat air fryer to 370 degrees

-Cook for 16 min

-Assemble salad with romaine, grape tomatoes, basil, and mozzarella pearls

-Make dressing using this recipe

-Toss salad in small amount of dressing and continue until it coats

-Pull out thighs and dice

-Assemble and enjoy!

 

Sous Vide Chicken Breasts with Garlic Couscous

-Preheat sous vide to 149.5 degrees

-Vacuum seal chicken breasts with Dan-O's Seasoning

-Cook for 2 hours

-Pull out and sear both sides on high heat in pan on stove til golden brown

-I followed this recipe for the Garlic Herb Couscous

 

Cheese Tortellini with Blistered Tomatoes & Italian Sausage

-Cook Tortellini to package

-Brown and cook sausage on stove with garlic

-Once halfway cooked add whole grape tomatoes 

-Make space on pan to cook off some tomato paste with garlic paste

-Mix all together

-Add 1/4 cup of half and half

-Drain tortellini and save some pasta water

-Add tortellini with sausage and tomatoes

-Mix all together with small amount of pasta water 

-Serve and Enjoy!
